One of the most exciting parts about hiring a campervan and camping in the outback is the cooking. Prepping dinner around the campfire, eating under moonlight, breakfast over sunrise – every meal is an event in itself and we want to help you make it simple and easy.

We have prepared 7 delicious breakfast recipes and meal ideas for your next campervan and camping trip. Meats, cheeses, breads, vegetables, even fungi are all in play for a great way to start your camping day.

Camping Breakfast Ideas Omelette

Omelettes are perfectly appropriate for cooking on a campervan gas stove, or a morning campfire, especially due to their versatility. Want a vegetarian meal? Load it with onions, peppers, and cheese. Got some leftover meat from the night before? Dice it and add it. You can include a world of possibilities inside those fluffy egg flaps.

Ingredients for 1 serving:

  • 1 tsp. Butter
  • 2 Eggs
  • 1/8 tsp. Salt
  • Cheese – to taste
  • Onions – to taste
  • Peppers – to taste
  • Spinach – to taste

Put a light oil or butter into a skillet over medium high heat. While the oil heats, beat three eggs briskly in a bowl. Pour eggs into skillet when oil is at high heat. When the egg has cooked on the bottom, flip the eggs over like a pancake and then put your fillings down the middle. Some fold the eggs over the filing while others fold both sides. Let the melting cheese bind the egg to the filling,

Corned Beef Hash with Sunny Side Up Egg

Camping Breakfast Corned Beef

Your morning will now be complete with Beef Hash and Sunny Side Up Egg. For an easy and extremely tasty breakfast, this dish is perfect to fill you up and help you last the day.

Ingredients for 1 serving:

  • 1 Egg
  • 2 ounces of corned beef
  • 3 potatoes
  • ½ tsp. Salt
  • Pinch of Pepper
  • ¼ onion

This works with either fresh or canned corned beef. Shred or dice corned beef and potatoes, fry them up in your skillet until the potatoes are browned and crispy. Then fry up eggs sunny side up and runny on your easy to control campervan gas stove. Since it is camping, feel free to use butter or pork grease to get the edges nice and crispy.

Serve the eggs on top and break the yolk. The deliciously creamy centre of the egg will spread all over your corned beef and potatoes like a sauce.

The addition of egg yolk makes the rest of the dish taste remarkably decadent.

Leftover Scrambled Eggs

Camping Breakfast Scrambled Egg

It can’t be a breakfast without eggs, right? Scrambled Eggs, a dish everyone loves and you can make it as versatile as you like.  Add sausage, bacon, ham, cheese, onions, peppers, a variety of cheeses, you name it – put it in.

Ingredients for 1 serving:

  • 2 Eggs
  • ¼ cup of Milk
  • Pinch of Salt
  • Pinch of Pepper
  • Any other leftover ingredients

Cook the meats and vegetables first, consider how well cooked you want the vegetables before adding them. Once your ‘leftovers’ are complete, then cook up your eggs with a dash of milk, butter, salt and pepper.

Once you’re happy with your scrambled eggs, then throw everything together for the perfect ‘leftover scrambled eggs’.

Breakfast Sandwich in a Turtle

Camping Breakfast Ideas Sandwich in a Turtle

“Turtle” refers to wrapping food in thick aluminium foil and placing it near enough to the hot campfire coals or flames to cook.

The foil prevents the flames from directly cooking the food, but it still lets in a perfect smoky flavour to infuse the bread, eggs, meat, and anything else wrapped inside.

Ingredients for 1 serving:

  • Bread
  • Eggs
  • Bacon
  • Cheddar cheese
  • Any other leftover ingredients

A great breakfast sandwich combines crispy bacon, fried egg, and cheddar cheese onto two slices of sourdough bread. Cook any meat before adding to your sandwich. Then wrap the sandwich in foil, place near the flames, then remove after a few minutes.

Turtles are also perfect for roasting meat without creating too much char.

Pancakes and Syrup

Camping Breakfast Pancakes

Another easy to cook choice for a campfire breakfast is pancakes. Most people simply use the instant “just add water” version, but even proper pancake mixes take very little effort.

Ingredients for 2 serving:

  • 1 ¾ Milk
  • 2 Eggs
  • 2 cups of self raising flour
  • 1/3 cups of sugar
  • Butter for frying
  • Syrup

  • Whisk the eggs and add milk
  • Sift flour into a large bowl, and stir in the sugar
  • Add milk and eggs into the mixing bowl
  • Whisk until combined
  • Pour onto hot buttered skillet until it forms a circle four inches wide
  • Then wait until bubbles form on the top
  • Flip over and cook until both sides are golden brown
  • Serve with butter and syrup, or even fresh fruit.

Just make sure that you follow the recipe, or you might end up with weak crepe-type pancakes or thick bready chunks.  Most hired campervans have stoves and a variety of different sized pans perfect for pancakes.

Camping Breakfast Ideas Bacon and Tomatoes

Of course, almost every camping buddy will appreciate waking up to a mountain of bacon freshly fried over a fire. The fatty, crunchy, salty, cured flavour pairs with almost anything else that you choose to serve.

Bacon is probably the most versatile and popular of the breakfast meats, but have you ever cooked it with tinned tomatoes – and made a Bacon and Tomato mix?

Ingredients for 2 servings

  • 6 rashers of Bacon
  • 1 x tinned Tomatoes
  • 4 x slices of Bread
  • Pinch of Salt
  • Pinch of Pepper

This method is so simple. Cook up your bacon, chop it up into little pieces, then add to a jar of tinned tomatoes, add salt and pepper. Lightly toast your bread and then put your mix on top. Delicious!
